Description
The Tomate (French for "tomato") is, alongside the Mauresque, one of the most popular variations of the classic French pastis drink. It owes its name to the vibrant red color created by the addition of grenadine. The sweet fruitiness of the pomegranate syrup mellows the intense anise note of the pastis, making it more approachable and rounder in flavor. Topped up with ice-cold water, it is the perfect, refreshing aperitif for a summer day in Provence.
Preparation
- Pour the pastis and grenadine into a highball glass.
- Slowly add the ice-cold water to create the typical milky cloudiness ("louche").
- Add a few ice cubes and stir gently.
- Serve without a garnish.
