Description
The Mauresque (French for "Moorish") is a classic French aperitif, particularly popular in the south of France. It is a simple but delicious variation of the traditional pastis drink. Instead of just water, the pastis is sweetened with almond syrup (orgeat) before being diluted with cold water. The result is a refreshing long drink where the strong anise flavor of the pastis combines with the sweet, nutty notes of the almond.
Preparation
- Pour the pastis and almond syrup into a highball glass.
- Slowly add the cold water. This will create the typical milky cloudiness ("louche").
- Add ice cubes and stir gently.
- Serve without a garnish.
