Description

The Wild Times is a modern and very popular spritz variation that is perfect for the summer. It combines the tart bitterness of Aperol with the freshness of a dry white wine. The drink is topped not with Prosecco, but with fruity wild berry tonic, which gives it an intense berry note and a pleasant sweetness. The result is an incredibly quaffable and balanced aperitif that is a bit more complex than a classic Aperol Spritz.

Preparation

  1. Fill a large wine glass with plenty of ice cubes.
  2. Pour the white wine and Aperol into the glass.
  3. Slowly top up with the chilled wild berry tonic.
  4. Stir gently once.
  5. Garnish with a fresh raspberry and a blackberry.
