The Peach Rosemary Smash is a sophisticated and aromatic mocktail that proves how well sweet and herbal notes can harmonize. The juicy sweetness of a ripe peach is perfectly complemented by the earthy, almost pine-like aroma of fresh rosemary. A hint of maple syrup enhances the fruitiness, while lemon juice provides the necessary balance. It's a surprisingly complex and elegant drink.
Preparation
- Cut half a peach into chunks and place it in a shaker along with the needles from about half of the rosemary sprig.
- Muddle well.
- Add lemon juice and maple syrup, fill the shaker with ice, and shake vigorously.
- Double-strain through a sieve into a tumbler glass filled with fresh ice.
- Top up with sparkling water.
- Garnish with a fresh peach wedge and the remaining rosemary sprig.
