Description

The Old Cuban is a modern classic created in the early 2000s by the famous bartender Audrey Saunders in New York. It is often described as the luxurious evolution of a Mojito. The drink combines the freshness of mint and lime with the depth of aged rum and the elegance of Champagne. A few dashes of Angostura bitters add extra spicy complexity. The result is a perfectly balanced, sparkling, yet rich cocktail for special occasions.

Preparation

  1. Pre-chill a coupe glass.
  2. Add mint leaves, lime juice, and simple syrup to a shaker and gently muddle.
  3. Add aged rum, Angostura bitters, and ice. Shake vigorously.
  4. Double-strain the contents through a sieve into the chilled glass.
  5. Gently top with the chilled Champagne or sparkling wine.
  6. Garnish with a fresh mint sprig.
