Description

The Horse's Neck is a classic highball known for its characteristic garnish: a very long, continuous spiral of lemon peel that hangs in the glass, resembling a horse's neck. Originally a non-alcoholic drink made with ginger ale, it was later supplemented with brandy or American whiskey. The optional addition of Angostura bitters gives the otherwise simple drink an extra aromatic depth. It is an incredibly refreshing and elegant long drink.

Preparation

  1. Peel a very long, continuous spiral from a lemon.
  2. Place the spiral in a chilled highball glass, letting one end hang over the rim.
  3. Carefully fill the glass with ice cubes.
  4. Pour the brandy (or bourbon) over the ice.
  5. Slowly top up with well-chilled ginger ale.
  6. Optionally, add a few dashes of Angostura bitters on top.
