Hibiscus Collins
An elegant and floral mocktail. Our recipe for a non-alcoholic Hibiscus Collins with hibiscus tea, lemon, and soda.

Description
The Hibiscus Collins is a wonderful non-alcoholic version of the classic Tom Collins. Instead of gin, we use a strongly brewed and chilled hibiscus tea. The tea not only gives the drink its stunning deep red color but also a pleasant tart and floral note that harmonizes perfectly with the acidity of the lemon. Topped with soda water, it becomes a sparkling, elegant, and incredibly refreshing long drink.
Preparation
- Add all ingredients except the soda water to a cocktail shaker filled with ice.
- Shake vigorously until the shaker is well-chilled.
- Strain into a Collins glass filled with fresh ice cubes.
- Gently top up with soda water.
- Stir briefly and garnish with a lemon wheel and optionally a dried hibiscus flower.
