Description

The Champagne Cocktail is one of the oldest and most stylish cocktails in existence. Its first mention dates back to 1862 in Jerry Thomas' "Bartenders Guide." The drink is a wonderful ritual: a sugar cube is soaked with Angostura bitters, placed in a glass, and topped with Champagne. The sugar slowly dissolves, creating a continuous stream of bubbles, while the bitters add a spicy depth to the Champagne. A splash of Cognac is a popular addition to give the drink more body.

Preparation

  1. Place a sugar cube on a bar spoon and saturate it with 2-3 dashes of Angostura bitters.
  2. Drop the soaked sugar cube into the bottom of a pre-chilled champagne flute.
  3. Optionally, add the Cognac.
  4. Slowly and gently top up the glass with ice-cold Champagne.
  5. Garnish with a long lemon spiral.
