The Calvados Sour is an elegant and highly aromatic variation of the classic sour cocktail. Instead of whiskey, this version uses Calvados, a fine apple brandy from Normandy, which gives the drink an intense, fruity apple note. The combination of the warmth of Calvados, the fresh acidity of lemon, and a subtle sweetness is perfectly balanced. Prepared with egg white, it achieves a wonderfully velvety texture and a stable foam head, making it a sophisticated drink for connoisseurs.
Preparation
- Add all ingredients to a cocktail shaker.
- For an optimal foam head, first perform a "Dry Shake" (without ice) for about 15 seconds.
- Fill the shaker with ice and shake vigorously again until it is ice-cold.
- Strain the contents through a fine sieve into a pre-chilled coupe glass.
- Garnish with a thin apple fan or a lemon peel.
