Description
The Bellini is the epitome of elegance and the Italian way of life. It was invented in the 1930s or 1940s by Giuseppe Cipriani, the founder of the legendary Harry's Bar in Venice. The drink was named after the Venetian painter Giovanni Bellini because its unique pinkish-white color reminded Cipriani of the tones in the artist's paintings. A true Bellini consists of only two ingredients: well-chilled Prosecco and the purée of fresh white peaches. It is the perfect drink for brunch, a wedding, or any special occasion.
Preparation
- Pour the peach purée into a pre-chilled champagne flute.
- Slowly and gently top up with ice-cold Prosecco. Hold the glass at a slight angle to prevent it from foaming over.
- Stir very gently once with a bar spoon to combine the ingredients.
- Serve immediately.
